Simcoe is best characterized as having a pronounced pine or woodsy aroma with bright citrus flavors (blood orange) with earthy undertones, aromas of grapefruit and herbs. With a high alpha percentage and low cohumulone, it makes a very nice foundational bittering hop. It is also noted though for its favorable aroma qualities.
